Halibut & Pickled Garlic Scape Spread

Ingredients
  

  • 250 ml Cooked halibut
  • ¼ Juice of fresh lemon
  • 60 ml Pickled garlic scapes chopped fine, may use fresh garlic scapes
  • 45 ml Mayonnaise
  • Salt and black pepper to taste

Instructions
 

  • Using a fork mash ingredients together in a bowl.
  • Spread on bread and garnish liberally with chopped salad greens.

Notes

Use either fresh or pickled garlic scapes, or a combination. If using mainly fresh scapes the recipe will lack an essential tart flavour. It's therfore recommended to add  30 ml (2 Tbsp) finely chopped dill pickle.
